Probably the most famous of all wine toasts is the one where Humphrey Bogart toasts Ingrid Bergman with a glass of Vive Clicquot and the words, "Here's looking at you kid" in the classic movie, Casablanca.

The fact is that wine has been around just about as long as man has walked the earth. Wine has been written about and argued about since the dawn of civilization, and that isn't likely to change in the foreseeable future.
Hugh Johnson wrote, "The scope of the subject of wine is never ending, [as indeed,] so many other subjects lie within its boundaries. Without geography and topography it is incomprehensible; without history it is colorless; without taste it is meaningless; without travel it remains unreal. It embraces botany, chemistry, agriculture, carpentry, economics -- any number of sciences whose names I do not even know. It leads you up paths of knowledge and by-ways of experience you would never glimpse without it."

Another famous quote concerning wine is: "Good wine is a good familiar creature if it be well used." William Shakespeare (1564-1616), in his tragic play Othello, Act II, Scene iii (315)
My personal favorite wine quotation, though, is: "Wine is one of the most civilized things in the world and one of the most natural things of the world that has been brought to the greatest perfection, and it offers a greater range for enjoyment and appreciation than, possibly, any other purely sensory thing." Those words were written by Ernest Hemingway in "Death in the Afternoon" and they say it all!

My favorite wine toast is an old Irish toast of unknown origins that goes, "May your glass be ever full May the roof over your head be always strong. And may you be in heaven half an hour before the devil knows you're dead."
